Low-FODMAP Mexican Food: What to Order & Cook
Here is the good news for anyone who loves tacos: Mexican food is one of the most low-FODMAP-friendly cuisines out there. The base ingredients — corn, rice, tomato, peppers, grilled meats, cheese, lime — are largely IBS-safe. You only need to solve two problems: the wheat in flour tortillas, and the onion and garlic hiding in almost every sauce. Fix those and you can eat well. Portions are anchored to the Monash University protocol.
